Idaho's Bean and Pasta Salad

A fabulous bean and pasta recipe from former Idaho governor Dirk Kempthorne and featured in a new book titled Boots ’n’ Beans by Boots Reynolds.

Beans have borne the brunt of many jokes and that old familiar rhyme, but without them, old-time cowpunchers would’ve starved. Leave it to cowboy cartoonist and longtime Western Horseman contributor Boots Reynolds to make them the subject of his new book, Boots ’n’ Beans.

With his dry wit and comical paintings, Reynolds pays homage to the simple wholesomeness of the bean. In addition to amusing anecdotes and brilliant imagery, the book also features more than 60 bean recipes submitted by familiar names in the horse industry.

Idaho's Bean and Pasta Salad

RECIPE BY FORMER IDAHO GOVERNOR DIRK KEMPTHORNE, SUN VALLEY, IDAHO

1½ cups cooked or canned red beans
2 cups small-shell macaroni, cooked and drained
2 cups frozen peas and carrots, thawed and drained
1½ cups sliced celery

Dressing

¼ cup low-fat Italian dressing
¼ cup low-fat mayonnaise
2 tablespoons chopped parsley
½ teaspoon salt
1⁄8 teaspoon pepper

Combine macaroni, beans, peas, carrots and celery. Mix Italian dressing, mayonnaise, parsley, salt and pepper; toss with the macaroni mixture. Mix well. Serves eight.
